Nicolas Rossignol, a fifth-generation Volnay vigneron, began winemaking at his family estate in 1994, training at Joseph Voillot, Domaine du Vieux Télégraphe, and Boschendal. In 1997, he established his own domaine, expanding from 3 to 17 hectares across Volnay, Pommard, and Beaune.
The vineyards follow traditional and biodynamic principles, with shallow plowing, lunar cycles, and no chemical herbicides. Vinification relies on strict fruit sorting, native yeasts, and minimal new‑oak. Wines are bottled unfined and unfiltered to preserve terroir.
Hailed by critics like Allen Meadows and William Kelley as a leading Côte de Beaune talent, Rossignol is praised for moving toward refined purity, supple tannins, and masterful whole-cluster use that captures Volnay’s elegance and Pommard’s depth.
Volnay 1er Cru Chevret lies just below Cailleret on a gentle hollow with deep clay‑pebble soils. Vines aged 40 and 60 years yield a wine rich and generous, with red and black fruit, silky texture, and soft tannins—an archetypal Volnay.

The 2019 Volnay 1er Cru Chevret is lovely, unwinding in the glass with scents of cassis, smoke, plums and rose petals. Medium to full-bodied, layered and elegantly muscular, it's more mineral and tightly wound than the charming Clos des Angles. This is a promising proposition for the cellar.
